What you will learn
In this course, we will begin with the history of stevia, learning about some key events that shaped this sweetener’s role in the beverage industry. Next, we will dive into the chemistry and production of stevia. Then we’ll look at the quality guidelines and analysis, regulations and safety, and application and functionalities of stevia. The course will conclude with a lesson on existing and emerging technology in order to inform learners of the direction stevia is headed in the beverage market.
