What you will learn
High-potency sweeteners, like all other ingredients added to food in the United States, must be safe for consumption. This course will dive into the six FDA-approved sweeteners used as food additives in the United States: saccharin, aspartame, acesulfame potassium (Ace-K), sucralose, neotame, and advantame. Most of these additives are approved by global government agencies and used in food and beverages around the world. Lastly, this course will discuss the qualitative and quantitative synergy behind sweetener blending - a real challenge.
